Primal White Chicken Chili

Primal White Chicken Chili


One of the "secrets" I have found, to staying on the clean eating wagon, is to make food flavorful.  Eating food in its natural state already helps, but adding spices is even better :)  This is a delicious and quick (YES!) soup that will make your tastebuds happy.

Ingredients:
* 2lbs chicken, cubed
* 1/2 each, of red, yellow, and orange peppers
* red onion, chopped 
* minced garlic
* 3c. chicken broth
* 1 can coconut milk (or 1c. almond milk)
* 2 Tbsp olive oil
* 2 tsp salt
* 1 tsp oregano
* 1/2 tsp cumin
* 1 tsp garlic powder

If you enjoy a lotta' kick, add desired amount of red pepper to ingredient list, too! 

1. Add olive oil and minced garlic to stock pot on stovetop.  

2. Add in chicken, cooking on each side until 1/2 way done, or no pink.  

3. Add in peppers and let cook for a few mins until peppers are tender.

4.  Now add in chicken broth and milk, and all spices.

5.  Cover, and simmer until flavors are melded, then top with cheese and cilantro and enjoy!
